My sister has a very specific diet. No gluten, dairy, soy, potato, corn or lectins. After she requested a traditional Thanksgiving on her diet, I had to get creative. I found this amazing recipe for a potato substitute that didn't use cauliflower. It is colorful, creative and tastes charming. This is a great side dish to add color and uniqueness to any meal.
Ingredients:
- 1/2 pound Parnsnips peeled and diced
- 3 Carrots peeled and diced
- 3 tablespoon Olive Oil
- 1 tablespoon Thyme
Cooking:
1. Add carrots and parsnips to boiling water, and boil for 15 minutes
2. Drain and add carrots, parsnips, olive oil and thyme to food processor and pulse until combined
3. Enjoy!
