I was invited to a Christmas dinner and needed to bring an appetizer. The party was an hour away and I needed to find something that would last the drive and that I could prepare the night before. Alas, this recipe was found, sampled and approved. I tried a few variations but the recipe straight from delish.com is hard to beat.
I will add, if there is a nut allergy, they still taste great without the pecans! You could even replace the pecan pieces with granny smith apple pieces and get a very different taste. I highly recommend a mini muffin pan for this recipe.
Ingredients (for 24 bites)
- 1 (8-oz.) tube Crescent Dough
- Flour for surface
- 1 (8-oz.) wheel of Brie
- 1/2 c. Cranberry Sauce whole berry
- 1/4 c. Pecans or Apples chopped
- 6 sprigs of Rosemary cut into 1" pieces.
Cooking:
1. Preheat oven to 375° and grease a mini muffin tin with cooking spray
2. On a lightly floured surface, roll out crescent dough pinching together seams. Cut into 24 squares and place each square in a muffin slot
3. Cut brie into ~ 34 small pieces, discard smallest outside pieces and place each piece inside a piece of crescent dough
4. Top with a spoonful of cranberry sauce, some chopped pecans or apple, and one little sprig of rosemary
5. Bake until the crescent pastry is golden ~15 minutes
6. Enjoy!
