Beautiful Balsamic Glazed Carrots

One of my favorite side dishes and appetizers for parties are these balsamic-honey glazed carrots. They are a healthy, beautiful and extremely tasty which makes them a huge hit at parties, for Thanksgiving and at dinner with the family. I use the organic colored carrots when I can, but the regular orange ones taste just as good. The multi-colored carrots just have a better presentation.


I prep the carrots by pealing and cutting in half or quarters depending on the thickness of the carrot. When using organic colored carrots, I trim the bottom but leave the top greenery for presentation.


Ingredients: (for about 4 servings)

- 1 pound Carrots organic colored or regular orange

- 1/4 cup Olive Oil

- Salt

- 1 tbsp Thyme chopped

- 1/4 cup Balsamic Vinegar

- 1/4 cup Honey

- fresh Parsley for garnish



Cooking:

1. Preheat oven to 375°

2. Prep the carrots and drizzle with oil, salt and thyme

3. Bake the carrots for ~40 minutes until tender

4. To make the glaze, combine the balsamic and honey into a small saucepan and simmer until it is reduced by half ~15 minutes and coats the back of the spoon

5. Drizzle the glaze over the carrots, garnish with parsley and serve warm

6. Enjoy!
