Get Fired Up with this Fourth of July Firecracker Cake

Fourth of July is a fun holiday and it is one of my favorites. It involves a lot of food and blowing stuff up. Here is a fun recipe for when you get invited to one of the backyard BBQ's that is both visually and tastefully full of flavor. To be honest, it's more visually exciting than it is a flavor explosion, but it is sure to show off your 4th of July spirit!



This cake is bursting with color! The original recipe called for less frosting, but who wants less of a good thing? The added frosting really made a statement, but I will leave it up to your taste preferences. The original recipe can also be found on bettycrocker.com. For this recipe, I highly recommend a bunt pan or a fluted tube cake pan they are the same.


Ingredients:

- 1 box white cake mix

- Water, vegetable oil and whole eggs called for on cake mix box

- 1 package of 4 ounce servings Instant vanilla pudding

- Red gel food color

- Blue gel food color

- 16 ounce container vanilla frosting

- Red, white and blue candy sprinkles, if desired


Cooking:

1. Preheat oven to 350 °

2. Mix together the cake mix, pudding, water, oil and eggs together with electric mixer on medium speed 2 minutes.

3. In small bowl, place 1 cup of the batter; stir in 1 teaspoon of the red food color until blended. In another small bowl, place 1 cup of the batter; stir in 1 teaspoon of the blue food color until blended.

4. Pour red cake batter into bottom of pan. Carefully pour remaining white batter over red batter in pan. Carefully pour blue batter over white batter. The blue will not cover the white and it will look best when the blue makes a ring inside of the white batter. See the picture below to see the result. It was an extra surprise when someone cuts into it.

5. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Remove cake from oven. Let stand 10 minutes, remove from pan to cooling rack. Cool completely, about 1 hour. This is important to let it cool completely so that the icing will not melt right off when you put it on.

6. Once cool, separate the frosting into 3 even bowls. Add red food coloring to your liking to one bowl and do the same with blue to another.

7. Microwave uncovered on High 10 to 15 seconds or until thin enough to drizzle over cake. With spoon, drizzle warmed frosting back and forth over cake in striping pattern. I alternated between the three a couple of times.

8. Add sprinkles if you desire. A few on top gave it an extra kick visually and I didn't notice them when I was eating my slice.
