Lemon Blueberry Scone Cookies

They take the shape of a cookie but taste like a delicious scone. An easy and yummy treat that satisfies as a dessert or a light breakfast,


Ingredients:

- 1 box Lemon Cake Mix

- 2 Eggs

- 1/4 cup Lemon Juice

- 1/3 cup Butter melted

- 1/4 cup fresh Blueberries


Cooking:

1. Preheat oven to 350° and line baking sheet with parchment paper

2. Combine mix, eggs and butter until completely mixed together, then add blueberries and fold into batter careful not to break them

3. Scoop into even balls ~1.5 tbsp and bake for 10-15 minutes

4. Let rest on cookie sheet for 5 minutes then transfer onto cooling rack, place extra blueberries at this point if desired

5. Enjoy!
