This is my go-to breakfast every morning. It is fast to cook and assemble and I find that the protein and carbs in this breakfast give me enough energy to easily make it to lunch. It is also tasty enough I'm not left wanting more. I switched from bagels and cream cheese or yogurt to this and I have found that it cuts down my cravings for sugar throughout the rest of the day. Of I am out of bacon, I switch it to pepperoni and it still works out great.
Add your favorite cheese and meat to this to customize your breakfast and change it up so you don't get bored with breakfast!
Ingredients: (For 1 serving)
- Bagel or English Muffin
- 2 eggs
- 1 slice of your favorite cheese mine is pepperjack
- 2 slices of your favorite meat mine is precooked bacon or pepperoni
- Spinach
Cooking:
1. Cook your eggs to your liking. For this sandwich, I like to cook mine in an omelet so it is easy to fold onto my bread
2. Heat your precooked bacon in the microwave for ~10 seconds you can do these with your choice of meat
3. When your egg is almost cooked, add the slice of cheese and toast your bread of choice
4. Assemble and add fresh spinach if you desire
5. Enjoy!
