Weekends at home are the only time someone besides me cooks, at least in the morning. My dad has perfected the skillet potatoes, add your favorite eggs and veggies and you have a complete breakfast. After watching him make this so many times, I decided I should probably write it down.
Ingredients:
- 2 Russet Potatoes
- 1 Onion diced
- 1 Bell Pepper diced
- 2 tbsp Olive Oil
- 3 Eggs
- 1 tbsp Seasoning Salt
- 1 Garlic clove
Cooking:
1. Microwave potatoes until cooked ~ 6 minutes for 2
2. Saute onion and bell pepper
3. Add oil to pan and add potatoes
4. Season potatoes to taste and SLOWLY brown potatoes
5. When the potatoes are done, make eggs according to your liking
6. Serve and Enjoy!
