Bacon Breakfast Egg Cups

These are great for a big family or for meal prepping as you can make a lot at once. They are delicious and easy to make. You can fill them with all your favorites as well. Some examples could be spinach, onion, bell pepper, ham, cheese and whatever else you might like.


Ingredients:

- 6 slices bacon

- 6 eggs

- salt & pepper to taste

- ¼ cup shredded cheddar cheese

- Other desired ingredients


Cooking:

  1. Preheat the oven to 400°F

  2. Place the slices of bacon in the muffin tin, wrapping in a circle.

  3. Bake the bacon for 10 minutes.

  4. Remove the bacon from the oven and crack 1 egg into each of the cups, then sprinkle with salt, pepper, and cheddar cheese.

  5. Bake for another 10 minutes, or until the egg yolks reach your desired consistency.

  6. Run a knife around the edge of each cup to loosen and remove. Sprinkle with chives, if desired.

  7. Enjoy!
