Welcome These Meatball Wellingtons*

I had saved a video on Facebook for who knows how long and I finally had the time to look through some of my saved items. While looking in my food folder, I found this recipe and had to try it immediately. I am only saddened by the fact I hadn't tried these sooner. Individually, they make a great appetizer. Eat a few of them, they make a tasty meal!

The original recipe missed some items but what can you expect from a Facebook video? They are pretty simple to make and very delicious.


Ingredients: (for ~ 24)

- 1 pound Ground Beef

- 1/2 cup Breadcrumbs

- 2 Eggs

- 1 pinch Salt

- 1 pinch freshly ground black pepper

- 1/2 cup Onion, minced

- 3 cloves Garlic, minced

- 1/4 cup fresh Parsley, chopped

- 2 packages Thawed Puff Pastry, cut into 4-inch squares

- 2 cups shredded Mozzarella

- Tomato sauce, for serving

- Basil, for garnish

- Grated Parmesan, for garnish



Cooking:

1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, salt and pepper, minced onion, garlic cloves, and chopped parsley.

2. Shape into small balls about 1 1/2 inches in diameter

3. Place meatballs on a parchment-lined baking sheet & broil for 7 to 10 minutes they do not need to cook through because they will be baked for another 25 minutes

4. Preheat oven to 400 degrees.

5. Flour your work surface & place puff pastry squares onto surface.

6. Add a heaping tablespoon of shredded mozzarella onto center of pastry square and add 1 meatball on top

7. Wrap puff pastry around meatball. Place on parchment-lined baking sheet, seam side down

8. Brush with egg wash and bake for 25 minutes

9. Serve atop tomato sauce, and garnish with basil and Parmesan

10. Enjoy!


*90/10 Ground Beef and Nonfat Mozzarella come out to 171 calories per piece
