I found this recipe in a paleo magazine "Well Fed." It combines all sorts of different flavors to create a taste explosion! It tastes fresh and healthy and is a huge hit with the family.
Ingredients:
Slaw
- 1 Carrot
- 1/2 Jicama
- 1 Lime
- 1/4 cup Cilantro
Tacos
- 2 tsp Coconut Oil
- 1 Onion
- 1 Jalapeno
- 2 cloves Garlic
- 1 tsp Allspice
- 1 tsp Salt
- 1/2 tsp Cinnamon or Nutmeg
- 1 1.2 pounds Pork or Turkey
- 1 ripe Mango
- 1 tablespoon Soy Sauce or coconut aminoes
- 1 head of Butter or Romaine lettuce for the shells
Cooking:
1. Warm oil
2. Add onion and jalapeno- saute for 5-7 minutes
3. Add spices, mango and soy sauce & cook for 5 minutes
4. Cook meat until done
5. Serve on lettuce cups topped with slaw
6. Enjoy!
