When craving an Asian-inspired meal, I came up with this. It has rice noodles, water chestnuts and ponzu along with spicy shrimp, fire-roasted corn and bell peppers. The flavors come together to form a very yummy dish.
Ingredients:
- 1/4 pound Shrimp
- 1/2 cup Roasted Corn
- 1/2 Bell Pepper diced
- 1/2 can Water Chestnuts
- 2 ounces Rice Wide Noodles
- 1/2 Avocado
- Ponzu Sauce
- Lime
Shrimp
- 1 pound Shrimp peeled and de-veined
- 2 tbsp Olive Oil
- 1 tsp Hot Sauce
- 1 tsp Red Pepper Flakes
- 1/2 tsp Parsley, Oregano, or Thyme
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Salt
- 1/2 tsp Paprika
Cooking:
1. Boil salt water and cook the noodles for 4-6 minutes
2. Heat up roasted Corn
3. Saute water chestnuts and bell pepper
4. Shrimp
1. Combine all ingredients beside the shrimp to form a paste
2. Lay the shrimp on a piece of parchment paper on a baking sheet
3. Brush the shrimp with the paste
4. Bake for 8-12 minutes depending on size
5. Combine ponzu sauce with the noodles and place other ingredients on top, garnish with a lime wedge
6. Enjoy!
