Spaghettify Your Squash

This is another low carb dinner on my list. Once again, I wouldn't say this is a direct replacement for spaghetti, but it is a good dish on it's own. This is also only low carb if you use a low carb Mariana and a bread free meatball. If you are not worried about low carb and you just want to try something new and more healthy, this is a recipe for you.




My boyfriend at the time suggested this recipe because at the time I was trying gluten-free alternatives so the meatballs and sauce were both gluten-free as well.


Ingredients: (for 2-4 servings)

- 1 Spaghetti Squash de-seeded

- Spaghetti Sauce as desired

- Cheese as desired

- 1 pound Meatballs pre-made


Cooking:

1. Heat oven to 400°

2. Cut squash, de-seed, and cook for 1 hour on a foil-lined baking sheet

3. Shred the squash to make "noodles"

4. Add the meatballs, sauce and cheese

5. Bake another 15 minutes

6. Enjoy!

This was my first time trying spaghetti squash and it was a wonderful way to try it
