I am a huge fan of street tacos. Actually, I'm a fan of tacos in general. I like street tacos specifically because I can't eat a lot at a time and street tacos gives me the opportunity to try several types of tacos at once. They just feel fun to me and I enjoy the adventure of each bite. You can try different meats, sauces, combinations and I love it.
I happened to have some left over taco seasoned beef so I added that taco to my plate but this is a recipe specifically for the chicken and avocado tacos. I originally found this delicious recipe on cookingclassy.com. I recommend having marinating time of at least an hour up to six hours.
Ingredients For Marinade: (For 12 servings)
- 1 pound Boneless Chicken Thighs
- 1/4 cup Lime Juice
- 3 Cloves Garlic
- 2 tsp Cumin
- 1 1/4 tsp Chili Powder
- 1/4 cup Cilantro
- 24 mini corn tortillas mission street tacos are good
Ingredients For Toppings:
- 1 Avocado
- Chopped Onion
- Chopped Cilantro
- Lime Wedges
- Hot Sauce
Cooking:
1. Combine all ingredients for marinade and marinate between 1-6 hours.
2. Cook chicken and dice
3. Serve with your choice of toppings and sides
4. Enjoy!
