I was looking for a light and refreshing dinner for the weekend and this recipe definitely answered the call. All the flavors blend together creating a delicious meal that has you excited to eat bite after bite.
I am a huge fan or corn so when I saw this had corn relish, I was sold almost instantly. After making it, I am hooked. I originally found this recipe on delish.com.
Ingredients: (for 4 servings)
- 2 cups Brown Rice cooked
- 1 pound Shrimp de-veined and tails removed
- 1 1/2 tsp Cumin
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- Salt to taste
- Olive Oil
- 1 1/2 cup Fire Roasted Corn
- 2 Bell Pepper diced
- 2 tablespoon Cilantro chopped
- Avocado sliced
- Lime
Cooking:
1. Combine shrimp with cumin, paprika, garlic and onion in a large bowl
2. Saute the red pepper and add the fire roasted corn to heat; add cilantro this step is optional but I prefer the peppers to be sauteed and the corn to be warm
3. Cook the shrimp until opaque and charred
3. Split the rice between 4 bowls and top with shrimp, corn salad, sliced avocado and lime juice and serve
4. Enjoy!
