Shrimp Patties

I originally found this recipe in a paleo magazine called well fed and I knew I had to try it. I made this before I got myself a food processor. I need to make them again now that I have one! it would cut a lot of time and effort down!

Ingredients:
- 1 1/2 pound Raw Shrimp peeled and de-veined
- 1 8 ounce can Water Chestnuts
- 2 tsp Water
- 1/2 tsp Cream of Tartar
- 1/4 tsp Baking Soda
- 1 clove Garlic
- 1 tablespoon Cilantro
- 1 tablespoon Chives
- 3-4 tsp Coconut Oil
Dipping Sauce
- 1 clove Garlic
- 1 scallion
- 1/4 cup Rice Vinegar
- 1/4 cup Coconut Aminos or Soy Sauce
- 1/2 tsp toasted Sesame Oil or Olive Oil
Cooking:
1. Cut shrimp and blend them with water chestnuts, water, cream of tartar, baking soda, garlic, cilantro, chives and salt
2. Warm coconut oil over medium high heat
3. Wet hands and measure 1/4 cup paste and shape into patties
4. Cook one side for 2 1/2 minutes, flip and cook another 1-2 minutes
5. Combine dipping sauce ingredients and serve with cooked patties
6. Enjoy!
