My Christmas Surf and Turf

Whenever I want a really special dinner, I cook this up. Bacon-wrapped filet over grilled onions and spicy oven baked shrimp over roasted asparagus and mashed potatoes. This recipe will cover all the above items for a complete meal guide!

Ingredients:

Bacon wrapped filet

-I buy mine pre-wrapped but you could easily wrap it yourself with one piece of thick cut bacon per filet


Asparagus

- 1 bunch Asparagus

- 1 tbsp Olive Oil

- 2 tsp Seasoning Salt


Shrimp

- 1 pound Shrimp peeled and de-veined

- 2 tbsp Olive Oil

- 1 tsp Hot Sauce

- 1 tsp Red Pepper Flakes

- 1/2 tsp Parsley, Oregano, or Thyme

- 1/2 tsp Garlic Powder

- 1/2 tsp Onion Salt

- 1/2 tsp Paprika


Mashed Potatoes

- 3 pounds Russet Potatoes

- 1 tsp Salt

- 2 tbsp Butter

- 1 cup Hot Milk


Cooking:

Bacon-wrapped filet

1. Preheat oven to 425°

2. Sear each side of the filet in a little bit of oil for 1 minute per side, then roll the bacon side in the pan until briefly seared

3. Transfer to the oven and bake 4 minutes per side for medium rare


Asparagus

1. Preheat oven to 425°

2. Trim the ends of the asparagus

3. Toss the asparagus in olive oil and seasoning salt

4. Spread the asparagus in a single layer on a baking sheet

5. Bake for 12-15 minutes depending on thickness


Shrimp

1. Combine all ingredients beside the shrimp to form a paste

2. Lay the shrimp on a piece of parchment paper on a baking sheet

3. Brush the shrimp with the paste

4. Bake for 8-12 minutes depending on size


Mashed Potatoes

1. Boil potatoes over medium low heat with 3/4 tsp salt for 15-20 minutes you can peel the potatoes first or leave the skin (its up to preference)

2. Drain water and let the rest of the water evaporate for 2 minutes

3. Mash until no clumps remain and add butter and salt. Slowly add in milk until creamy

4. Add fresh thyme to spruce it up a bit or enjoy as is
