These are by far one of my favorite meals to make because of the playfulness and creativeness of it. Meatloaf seems to be a staple in most homes and this is a fun and delicious way to play it up. The "frosting" is mashed potatoes with bacon bits and chive sprinkles. It is amazingly easy to make and so much fun.
You will need a muffin pan for this recipe. Piping or zip lock bags are a must as well. This recipe originally comes from bettycrocker.com
Ingredients: (For ~ 16)
-2 Eggs beaten
- 2 pounds Ground Beef
- 1 cup Panko Bread Crumbs
- 1 Onion diced
- 1 tablespoon Parsley
-2/3 cup Ketchup
- 2 tsp Worcestershire
- Instant Potatoes or Homemade Mashed Potatoes for "Frosting"
- Green Onions chopped
-Bacon diced
Cooking:
1. Preheat oven 350°
2. Mix ground beef with eggs, bread crumbs, onion, parsley, ketchup, worcestershire
3. Scoop mixture into greased muffin tin
4. Bake for 40 minutes
5. Make Instant potatoes or Mashed potatoes and put into piping bag or zip lock with the edge cut off of one side
6. Take meatloaf out of the muffin tin and top with piped mashed potatoes and green onion and bacon "sprinkles"
7. Enjoy!
