Lemon is one of my favorite ingredients. Citrus to be more specific. I get super excited when I come across a recipe that calls for it. I also like the versatility of chicken and how it matches the flavor of anything you want it to. I guess that's why people say "it tastes like chicken," because chicken can taste like so much. Another beauty in this dish, is that the Pasta can be changed out for other things like vegetables, rice, potatoes, and more.
I first found this recipe on cafedelights.com and it quickly became a favorite. This is for the original recipe with pasta.
Ingredients for the Chicken: (For 4 Servings)
- 4 Chicken Breasts
- 1 tsp Garlic Powder
- 1 tsp Salt
- Juice of a Lemon
- 4 tbsp Flour
For the Sauce:
- 1 tbsp Butter
- 2 tsp Oil
- 1 Onion
- 7 Cloves Garlic
- 1 1/4 cup Chicken Broth
- 2/3 cup Heavy Cream or 1/2 & 1/2
- 2 tsp Italian Seasoning
- 2 tbsp Parsley
- 1 tsp Cornstarch
- Lemon for Garnish
For the Pasta:
- Cooked Pasta to taste
- 1/4 cup Olive Oil
- 4 Cloves Garlic
- 1 tbsp Parsley
- Salt to taste
- 2 tbsp Parmesan Cheese
- Cooked Chopped Broccoli
Cooking:
1. Season the chicken with ingredients in the first list and roll in flour
2. Heat butter and oil in the second list and fry the chicken
3. When the chicken is done, move the chicken to a WARM plate I found this step very helpful
4. Add onion and garlic, reduce heat and add the chicken broth for 6 minutes
5. Add cream and simmer for 5 minutes
6. Mix 1 tsp cornstarch with 1 tbsp water and add to the center of the pan stirring quickly
7. Add chicken back into pan with lemon juice & Italian seasonings and simmer a couple of minutes
8. While the chicken is simmering, add cooked chopped broccoli, olive oil, garlic, parsley and cheese to pasta
9. Serve chicken and sauce over pasta
10. Enjoy!
