I was expecting this to be a quick recipe. It was very time consuming and I think there are better ways to get the same taste. I am posting this one because of how much my sister seemed to love it. It also does not photograph well so I apologize in advance.
I am complaining a lot about this recipe but it is quite delicious once you get past the amount of work it takes to prepare it and its less than amazing appearance. This recipe originally comes from spendwithpennies.com.
Ingredients: (About 4 servings)
- 1 lb lean Ground Beef
- 1 package Dry Onion Soup mix
- 4 small Potatoes skinned and sliced
- 2 cups Carrots chopped
- 1 large or 2 small Onions sliced
- Asparagus
- 2 tablespoons Olive oil
- 1 teaspoon Garlic Powder
- Salt & Pepper to taste
- 2 cans Condensed Mushroom Soup
Cooking:
1. Preheat oven to 375°
2. Combine ground beef and dry soup mix in a bowl & form into four patties
3. In a large bowl combine all remaining ingredients except mushroom soup. Toss until well mixed
4. Spray a 12″x18″ piece of foil with non-stick spray & place 1/4 of the vegetable mixture in the center of the foil. Top with 1 beef patty & 2 tablespoons of condensed mushroom soup on top of each patty.
5. Seal foil packets well and bake with beef side up on a large baking sheet
6. Bake 35-45 minutes or until potatoes and carrots are tender.
7. Enjoy!
