I was looking for a low calorie option to my favorite high calorie food: Enchiladas! I am a huge fan but I am also trying to eat healthier. I had to find a way to satisfy my cravings while sticking to my goal so I went on the internet hunt. What I found not only satisfied my craving, but it surpassed my expectations and I found a new, exciting flavorful way to make enchiladas.
These enchiladas are great for the family or person who doesn't like the heat of Mexican food. There isn't really anything spicy in here; just sweet, sour and savory flavors that combine in the best way. If you are a fan of heat like myself, just add your favorite hot sauce on top! I recommend Cholula or Tabasco as they work the best with the enchiladas. The inspiration for this recipe comes from tasteofhome.com
Ingredients: (for ~6 enchiladas)
- 1/8 cup Honey
- 1 tablespoon Lime Juice
- 1/2 tablespoon Oil I used olive oil
- 1 tsp Chili Powder
- 1/8 tsp Garlic Powder
- 1 1/2 cup Chicken shredded
- 1 10 ounce can Enchilada Sauce I used red, but green would work too
- 1/4 Onion diced
- 6 corn tortillas
- 1/4 - 1/2 cup shredded Cheddar Cheese the less cheese, the less calories. Trust me, you won't even notice the difference with this recipe
- Lime for garnish
Cooking:
1. Preheat oven 400°
2. Cook chicken and shred when there is no more pink
3. Pour half of the enchilada sauce into a greased baking pan
4. Mix all ingredients except tortillas and left over enchilada sauce into a large bowl
5. Fill tortillas and place in baking pan
6. Cover with the left over sauce
7. Bake for 25 minutes
8. Garnish with a sprinkle of cheese and lime wedges
9. Enjoy!
