Hello Hasselback Chicken

There are many ways to do a hasselback chicken. This recipe is for a caprese hasselback chicken. It has the intense flavors of the caprese with the easy going nature of chicken. This is a colorful and fun recipe that is easy to make and delightful to eat.


I went overboard with the mozzarella as the original recipe just said "slices" and i over estimated the size of each slice. I LOVE cheese so it wasn't a big deal to me. The dish was overflowing with cheese though so I recommend modest pieces. This can be served with a variety of sides like sweet potato fries pictured above, green beans, rice pilaf, asparagus or a simple Italian salad. Ingredients: (for ~ 3-4 servings)

- 2 boneless skinless Chicken Breasts

- 8 to 10 slices Mozzarella Cheese use your judgement, the pre-sliced mozzarella at the store will end up like the picture above

- 5 to 6 Grape Tomatoes sliced in half ; I had the orange variety on hand at the time

- Fresh Basil leaves

- 2 teaspoons Italian seasoning

- Salt and Pepper

- 2 teaspoons Olive Oil


I cheated on the fries, baked from frozen

Cooking:

1. Preheat oven to 400°

2. Cut slits across the chicken breast about 3/4 of the way through being careful not to cut all the way through

3. Stuff each slit with a slice of mozzarella cheese, half a grape tomato and a basil leaf

4. Place the chicken breasts in a baking dish that has been coated with non-stick baking spray & brush each chicken breast with olive oil

5. Sprinkle each chicken breast with salt, pepper and Italian seasoning

6. Bake 30 minutes or until the internal temperature of the chicken reaches 165 degrees

7. Enjoy!
