Healthy Hummusdilla

This recipe was sent to me by my coworker Elizabeth and it was so original I knew I had to try it. I had never though to heat up hummus before and boy was it a nice surprise. Couple that with fresh avocado and spinach (and any other toppings of your choosing) and you have one tasty, quick meal sure to fill you up.


Before I added the spinach

Ingredients:

- 1 Tortilla

- Hummus of your choosing (enough to cover the tortilla)

- 1/2 an Avocado (or more if you want, I'm not judging)

- Roasted Red Pepper (to your liking)

- A Handful of Spinach

- A Drizzle of Olive Oil


Cooking:

1. Cover the tortilla in a layer of hummus, add avocado chunks, roasted red pepper, spinach and a drizzle of olive oil

2. Heat over medium heat until tortilla starts to brown

3. Carefully fold over

4. Enjoy!
