I have been experimenting with "dillas" that aren't just made with cheese. I tried this one when I realized i was dipping my quesadilla into guacamole and thought "why not just put it IN the quesadilla?!" So I did and I can't go back. I try several different versions but this is the recipe for my favorite so far.
Ingredients: for fajita size tortillas
- 2 Fajita size Tortillas
- Guacamole enough to cover the tortilla, approximately 2 tbsp
- 1/4 Orange Bell Pepper diced
- Roasted Red Pepper
- Arugula or Spinach half a handful
- 1/4 cup Mexican Style Shredded Cheese
- 1 slice Pepperjack Cheese
- Salsa for dipping
Cooking:
1. Spread the guacamole over one tortilla
2. Add all the other ingredients to the other tortilla and cook over medium heat until tortilla starts to brown
3. Add the other tortilla when the cheese is melted and the tortilla is browned and flip onto guacamole side until brown
4. Cut if desired and serve with a side of salsa
5. Enjoy!
