This is an interesting take on the buffalo chicken craze. I wouldn't say this is my personal favorite but it is kind of a fun recipe and if eaten right away, it is pretty yummy. You can use your favorite buffalo sauce but I found Franks Original worked very well with these.
The idea for this came from lilluna.com but this version is heavily modified. These are good for a party appetizer or as part of a festive main meal.
Ingredients:
- 1 1/2 pounds of Chicken cooked in 2 cups Chicken broth
- 1/2 cup Carrots chopped and sauteed
- 1/2 cup Celery chopped and sauteed
- 1 cup Feta Cheese
- Cabbage slaw
- 1/4 cup Franks Hot Sauce
- 12 Eggroll Wrappers
- Ranch
- 2 tablespoon Butter melted
- Oil
Cooking:
1. Saute carrots and celery
2. Mix carrots, celery, cheese, butter, hot sauce, cabbage to taste, and chicken
3. Add mix into eggrolls wrappers and use water to seal the edges
4. Heat oil in a large pan on medium heat and fry each eggroll ~ 1 1/2 minutes on each side
5. Serve hot and with a side of hot sauce and/or ranch for dipping
6. Enjoy!
