What is better than a hearty, healthy, warm soup in the middle of winter? Honestly, you could have it any time of the year. I am more of a winter soup eater personally. I like how easy this recipe is to prep the night before, through n go in the morning, and eat when you get home from work. I did make my own tortilla strips for this which takes a little more time at the end, but still quick and easy.
I recommend using a slow cooker for this because of the convenience but you can modify this recipe for a stove top dinner if you are under time constraints. I first found this recipe on allrecipes.com
Ingredients: (for about 8 servings)
- 1 pound Chicken cooked and shredded
- 1 15 ounce can of diced Tomatoes
- 1 10 ounce can of Enchilada Sauce red
- 1 Onion chopped
- 1 4 ounce can of Green Chiles
- 2 cloves Garlic
- 2 cups Water
- 1 14 ounce can of Chicken Broth (or make your own)
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1 tsp Salt
- 1/4 tsp Pepper
- 1 Bay Leaf
- 1 10 ounce can (or package of frozen) Corn
- 1 tablespoon Cilantro chopped
- 7 corn tortillas
- oil
- Avocado
- Limes
- Cheddar Cheese shredded
If you want to get this ready to through in the slow-cooker in the morning so you don't have to wake up earlier to get this ready before work, it is really easy to prep ahead the night before. Get the slow-cooker out and ready (don't turn on until the morning); place everything but the tortillas, oil, avocado, lime and cheese into a container with a lid; put in the fridge overnight; pull out and dump into slow-cooker in the morning and cook all day!
Cooking:
1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker
2. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf, stir in corn and cilantro
3. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours
4. Preheat oven to 400 °
5. Lightly brush both sides of tortillas with oil & cut tortillas into strips
6. Spread on a baking sheet and cook until crisp ~ 10 minutes
7. Serve with avocados, lime, cheese and tortilla strips
8. Enjoy!
