This is good for an appetizer or a mail meal. They are simple, easy to make and most importantly, DELICIOUS. Easily customizable with your favorite toppings which makes it a great addition to a taco bar!
You will need a mini muffin pan for these. The original recipe is from almostsupermom.com and I feel it can be customized to anyone's taste. The only problem I faced was with the tortillas splitting and they definitely work better when they stay whole. I haven't found a solution to this as of posting this.
Ingredients: (for ~ 12)
- 1 cup Monterrey Jack Cheese
- 1 cup Chicken cooked
- 1 tsp Cumin
- 1 tsp Garlic Powder
- 1 tsp Chili Powder
- 1 cup Enchilada sauce
- Corn Tortillas
Cooking:
1. Preheat oven to 400°
2. Add all ingredients together
3. Put tortillas in the muffin tin and fill with the rest of the ingredients
4. Cook for 15 minutes
5. Top with your favorite toppings
6. Enjoy!
