I found my favorite chicken sandwich combination by visiting a few different create-your-own burger places. After I found out what I liked the most, I figured out how to make it myself! A lot cheaper that way, and I could enjoy it whenever I wanted.
Feel free to change out ingredients to your liking, this is just my favorite combination. The salad above is just a simple spinach salad with mandarin, cranberries, feta and sliced almonds. The dressing is an infused olive oil.
Ingredients: (for 1 sandwich)
- Ciabatta Bun
- 2 slices bacon cooked
- 1 Chicken Breast boneless
- 1/2 cup Spinach
- 1 slice Provolone
- a few tablespoons of Guacamole
- 1/4 cup Onions
Cooking:
1. Cook the chicken on either a grill or stove-top until cooked through
2. Saute the onions until transparent in color
3. When the chicken is finished cooking, slightly toast the ciabatta bun and top the chicken with the provolone allowing it to melt
4. If the bacon was pre-cooked, heat the bacon on either the stove, grill or in the microwave. If it was cooked alongside the chicken, skip this step.
5. Assemble the sandwich by placing the spinach on the bottom half of the bun followed by the chicken/provolone, guacamole, onions, bacon and the top half of the bun
6. Enjoy!
