This is pretty tasty low-carb option for those who are trying to eat less carbs, no wheat or gluten. Some even go as far to say it replaces a burrito but I do not agree with that statement. This recipe does combine some nice textures and flavors though so as long as your not trying to replace a burrito, it is a yummy dinner.
This recipe also works great for reusing left overs as you can change the meat and the fillings depending on what you have left over. The original recipe is from delish.com but as I said, it is very modifiable.
Ingredients: (For 4-6 servings)
- 4 Zucchinis cut in half length wise and hollowed
- 1 tbsp Olive oil
- 1/2 Onion diced
- 2 Cloves Garlic
- 1 pound Ground Beef
- 1/2 tsp Cumin
- 1/4 tsp Paprika
- Salt to taste
- Beans, Corn & Cheese to liking
- 2 tbsp Cilantro
Cooking:
1. Heat oven to 375°
2. Cook all ingredients EXCEPT zucchini and cheese
3. Scoop ingredients into hollowed zucchinis in a cake pan & top with cheese how much is your preference
4. Bake 15 minutes and top with cilantro
5. Enjoy!
